Just a short distance from Rome, is Ciociaria (“Cho-cha-REE-a”), a land of green fertile valleys and high-forested mountains. The area is best known for its simple, savory and healthy dishes such as Zuppa di Pane, handmade fettuccine with various sauces, and gnocchi with pork riblets, only to name a few. This is the area for wonderful goat and ricotta cheeses as well as fresh buffalo mozzarella. Add prosciutto di Guarcino and you have a feast!

The storybook cobblestone pathways through the village of Castro dei Volsci lead you to one visual treasure after another: flowerbox windows and steep stairways that beckon you to discover what lies at the top; the ancient stonework that seems to whisper to you across the centuries; and the local villager who appears out of a window to hang some laundry and reciprocate a friendly “Buongiorno.”

Over a glass of wine and lots of laughter in the beautiful kitchen of Palazzo Gregorio, learn from local chefs and women from the village how to prepare authentic Italian dishes following the traditions passed down to them from their great grandmothers, grandmas and mamma’s. Visit local artisans who demonstrate the art of making cheese, wine, sausage and olive oil, and unwind in the restored 1797 palazzo, complete with a traditional olive oil mill located on the ground floor.

This romantic culinary vacation is a fulfilling feast that not only tempts your taste buds but teaches you how to cook flavorful creations in the company of friendly locals in a beautiful, countryside setting.

Sat, Apr 22: Fly overnight to Rome, Italy.

Sun, Apr 23: Rome & Castro dei Volsci, Italy. Arrive in Rome and transfer to your Italian home in Castro dei Volsci for the next six nights. Enjoy a welcome aperitivo and light lunch then get acquainted with the medieval historical village of Castro dei Volsci on a walking tour. Unwind back at Palazzo Gregorio before a Welcome Dinner at the Ristorante Opificio del Gusto in the town of Ceprano. (Meals: Lunch, Dinner)

Mon, Apr 24: After breakfast set off to the town of Arpino, birthplace of Cicero and land of the "olives." Visit a traditional olive oil mill to learn how extra virgin olive oil is made. Enjoy a light lunch with flavors of the oil and sample some organic wine. Enjoy some gelato in Ciociaria, then head back to Palazzo Gregorio to meet Pastry Chef Dayana and start baking! Dinner is served at the villa's dining room. (B,L,D)

Tue, Apr 25: After breakfast at Palazzo Gregorio, visit the town’s farmers’ market to gather what is needed for tonight’s antipasto extravaganza. Visit a cheese caseificio (dairy) to sample fresh ricotta, buffalo mozzarella, and provolone. See the Abbey of Fossanova on the journey to the Tyrrhenian seaside town of Terracina. Thrill to a view of the sea, stroll by a few shops, then stop for lunch at a seafood co-operativa. Return to the palazzo, relax for a short time then jump into your second hands-on cooking class, as you prepare a variety of Antipasti. The day's activities culminate in dinner with wine, bruschette, crostini, frittate, grilled peppers and eggplant, frittelle di zucchine, and stuffed zucchini accompanied by the sampling of various formaggi e olive (cheese and olives). Wed, Apr 26: Today head to Pastorella to see the process of making fresh sausage. Visit a Prosciuttificio in the town of Guarcino (the Parma of Ciociaria), and enjoy a picnic lunch of fresh hand-cut prosciutto or porchetta. Return to the Casa and learn how to prepare a variety of homemade pasta shapes with the proper seasonal sauce. Enjoy the products of your labor with a bottle of wine for tonight’s dinner. (B,L,D)

Thu, Apr 27: Start the day at a vineyard in Val Comino, a region in Italy famous for its Cabernet wines. See a vineyard, visit the cellar and bottling plant, and learn the vinification process, capped by a wine-tasting. Stop for lunch at the Old Cantina Visocchi, now totally restored into a sophisticated restaurant with antique winery relics. Your host, Patrizia Patini, a sommelier, will give a taste and sampling of yet another fantastic wine of the region. In the afternoon prepare a list of secondi piatti (second dish) such as involtini, salsiccia con patate e peperuola, and scaloppine alla mela, along with the proper contorno to accompany the main course. Dinner with wine will be enjoyed in the palazzo’s dining room. (B,L,D)

Fri, Apr 28: Today is pizza day and you’ll have a pizza class, where everyone gets to select their toppings for their own old-world pizza pie and fire it up in a wood burning pizza oven. In the afternoon, relax, shop or explore the area at your leisure. This evening participate in a multi-course Farewell Dinner at Ristorante il Frantoio in the historical town of Boville Ernica. You’ll end your tour with a traditional Italian “Salute” as you raise your glass to new friends and memories that will last a lifetime! (B,L,D)

Sat, Apr 29: Transfer to Rome for flight home. (B)

Palazzo Gregorio occupies a 1797 structure in the heart of the historic center of Castro dei Volsci. The three-story high dimora storica belonged to the nobility of the town. In 2010 it was completely renovated and restored and today still preserves coffered wooden ceilings, antique wooden beams, and some original tile flooring. The interior décor reflects the ancient look while giving visitors luxurious modern day conveniences.
